Can Instant Funding accounts add positions while existing trades are showing unrealized profit?

Yes, adding to a position while in unrealized profit (also known as pyramiding or "floating profit scaling") is allowed on Instant Funding accounts.

Important: Be aware that on Instant Funding accounts, the trailing max drawdown is calculated based on your highest equity point (highest watermark) — including unrealized (floating) profits. This means that if your equity rises due to open profitable trades and you then add positions, your trailing drawdown level will have already moved up. If the market reverses, your account equity must not fall below that new drawdown threshold, or your account will be breached.
